After the manual harvest, the pepper berries are left to dry in the sun.
This will make the seed coat pop open and remove the black, bitter seeds.
Then, the berries are manually sorted using bamboo sieves.
Only the ripest and most aromatic pepper berries are preserved.
Ideal with fish, seafood, scallops and other salty dishes. Thanks to its citrus-like flavour, it is also suitable for sweet dishes or as a botanical gin.
